Hi. This is Stephanie Manley with Copykat.com.
Thank you for joining me. Today, we are going to make some honey roasted
carrots. I am going to use coconut oil to go ahead and roast these with.
If you don’t have coconut oil, olive oil will work just as well. So,
I’ve taken some really large carrots. I love to buy these because they’re
very inexpensive. I’m simply going to chop these into large, long planks,
so you can see the colors when they brown. . Just go ahead and put them in
your bowl. . Now, I’m going to make the marinade that goes over the carrots.
I have a couple of tablespoons of oil in here. Again, I used
coconut oil. You can use olive. Add a couple tablespoons of cider vinegar
to add this nice little bit of tartness. Then to offset that, I’m going to
add a little bit of honey. . A couple tablespoons of honey. I’m going to stir this together. . Then, I’m
going to pour this over the carrots. I want to stir the carrots to make
sure they’re well-coated. I’m going to put them into my baking dish. . I’m
going to season generously with salt and pepper. . Then, I’m going to
add a little bit of fresh herb right here. This is just some flat leaf parsley.
Let’s look at this dish, a nice bit of color and some extra flavor. So,
now we’re going to put this into a 375 degree oven and bake them until
they’re nice and golden brown. I hope you enjoyed my last video. Please be
